Pan Fried Potato Bites
- 1 large russet potato
- salt
- pepper
- butter
- olive oil
- dried oregano (you can change this up-- anything you like)
Wash & dice potato into bite size pieces. Heat a pan on medium high heat. Pour in a little olive oil & add potatoes. Cook for a couple minutes then add about a T or so of butter & mix to coat potatoes. Make sure to watch this closely or potatoes will stick. Sprinkle some salt, pepper & oregano. Continue to cook until golden brown.
