Yummy Quiche

I made this recipe up by researching other quiche recipes and to my surprise, it was excellent!

1 prepared 9inch pie crust
1 10oz box of frozen chopped spinach
1/3 cup of chopped onion
1 tsp of olive oil
6 slices of bacon
4 eggs
1/4 cup of milk
1/4 cup of sour cream
2 tsp of dijion mustard
1 cup of swiss cheese with 1/4 cup reserved
Salt and Pepper to taste


Preheat oven for 375
Line a pie plate with the pie crust. Bake the pie crust for 5 minutes and remove from oven to cool
Thaw the spinach and ring out excess water (You want this as dry as possible. I use a clean dish towel.)
Heat 1 tsp of olive oil to a small pan and then add onions. Cook until translucent
Cook and chop bacon
Mix eggs, mustard, milk, sour cream, salt, and pepper with a whisk. Whisk until smooth and well blended. Stir in 3/4c of cheese.

Stir the spinach, onions, and bacon into the egg mixture and then pour into the pie dish. Top with reserved cheese and bake at 375 for 25-30 minutes or until golden brown.

Serve with fresh fruit. Yum!
